Norwegian Stockfish Bolognese

  • Remove skin and bones and cut the fish into thick slices. Dry the pieces and place them in a lightly-oiled skillet.
  • Mix together the garlic, parsley, salt, pepper, oil and butter. Spread the mixture onto the pieces of fish.
  • Cook over high heat, turning carefully.
  • When the fish is done, season the pieces with lemon juice.
